Eggplant Parmesan

We have had an incredible crop of eggplant on the farm this summer, so of course we have perfected our eggplant parmesan.

Here’s the thing: I like to lean in a little and use Prego as a base (shhh … 🤫 ) Then I add our home grown herbs and tomatoes for a homemade taste.

INGREDIENTS FROM THE GARDEN:

  • 2 eggplants peeled and thinly sliced (1/8 inch thick)
  • 2 eggs beaten

INGREDIENTS FROM THE STORE:

  • 4 cups Italian Seasoned breadcrumbs
  • Prego Traditional Marinara Sauce
  • 2 packages fresh mozzarella, sliced
  • ½ cup shredded mozzarella
  • ¼ cup shredded parmesan
  • Grape Seed Oil
  • Marinara Sauce (Directions below)

DIRECTIONS:

  • Pre-heat oven to 350 degrees
  • Pour 2 Tablespoons Grape Seed Oil in large frying pan
  • Dip eggplant slices in beaten egg, then breadcrumbs.
  • Place breaded eggplant into the pan with hot oil
  • Fry 2 minutes each side
  • Place fried eggplant slices aside on a paper towel or dish cloth to soak up extra oil
  • Cover the bottom of a 9×13 inch baking dish with marinara sauce.
  • Place a layer of eggplant slices in the sauce
  • Place a layer of sliced mozzarella on the eggplant
  • Place a layer of marinara sauce on the eggplant
  • Place a layer of shredded mozzarella on the sauce
  • Continue layering eggplant, sliced mozzarella and shredded mozzarella
  • Top dish with shredded parmesan
  • Place banking dish in pre-heated oven and bake for 30 minutes.

FOR MARINARA SAUCE
INGREDIENTS FROM THE STORE:

  • 1 large Onion
  • 2 Cloves Garlic
  • 1 Extra large jar Prego Traditional marinara sauce
  • INGREDIENTS FROM THE GARDEN:
  • A sprinkle of Rosemary (A little goes a really long way)
  • 2 Tablespoons Oregano
  • 2 Tablespoons Thyme
  • 2 large Sage leaves

DIRECTIONS FOR MARINARA SAUCE:

  • In a large saucepan, sauté one large onion with minced garlic and 2 tomatoes, diced
  • Pour large jar of traditional Prego sauce into pan
  • Bring sauce to a boil, then turn down to simmer
  • Add fresh herbs
  • Let sauce simmer for 15 minutes
